  • 4 cups sweet corn off the cob or frozen
  • Salt & pepper
  • 1 cup sliced cherry tomatoes
  • Zest of 1 lime
  • 1 green pepper diced
  • Juice of 1 lime
  • 1/2 cup red onions sliced
  • 1/3 cup chopped cilantro
