- 1/4 tsp freshly cracked black pepper
- 1/2 lb linguine
- 1 tbsp cooking oil
- 4 oz mushrooms
- 1 cup grape tomatoes
- 1/4 tsp garlic powder
- 1 tbsp butter
- 4 oz fresh spinach
- 2 tbsp nutritional yeast
- 1/4 tsp salt
Boil a large pot of water, then add the pasta and cook until tender, about 7 minutes.
Reserve 1/2 cup of pasta water, then drain the pasta.
While the pasta cooks, slice the mushrooms and halve the tomatoes.
Heat oil in a large skillet over medium heat.
Add mushrooms and a pinch of salt; sauté until they release their moisture, about 5-7 minutes.
Add tomatoes and cook for 2 more minutes, then stir in spinach until wilted.
Add the drained pasta and butter to the skillet, tossing to coat in the melted butter.
Remove from heat.
Sprinkle with garlic powder, nutritional yeast, salt, and pepper.
Toss to mix well, adding reserved pasta water if needed for moisture
