Ingredients
  

  • 1/4 tsp freshly cracked black pepper
  • 1/2 lb linguine
  • 1 tbsp cooking oil
  • 4 oz mushrooms
  • 1 cup grape tomatoes
  • 1/4 tsp garlic powder
  • 1 tbsp butter
  • 4 oz fresh spinach
  • 2 tbsp nutritional yeast
  • 1/4 tsp salt

Instructions
 

  • Boil a large pot of water, then add the pasta and cook until tender, about 7 minutes.
  • Reserve 1/2 cup of pasta water, then drain the pasta.
  • While the pasta cooks, slice the mushrooms and halve the tomatoes.
  • Heat oil in a large skillet over medium heat.
  • Add mushrooms and a pinch of salt; sauté until they release their moisture, about 5-7 minutes.
  • Add tomatoes and cook for 2 more minutes, then stir in spinach until wilted.
  • Add the drained pasta and butter to the skillet, tossing to coat in the melted butter.
  • Remove from heat.
  • Sprinkle with garlic powder, nutritional yeast, salt, and pepper.
  • Toss to mix well, adding reserved pasta water if needed for moisture

  • For added flavor, consider incorporating fresh herbs such as basil or parsley at the end of cooking. This will enhance the dish with a burst of freshness and aroma.
