  • In a small heavy saucepan, heat the cream and vanilla over medium heat until bubbles start to form around the edges.
  • While the cream mixture is heating, whisk the egg yolks and sugar together in a large bowl until smooth.
  • Slowly pour 1/2 cup of the hot cream mixture into the egg yolk mixture, whisking constantly.
  • Gradually pour the egg yolk mixture back into the remaining cream mixture in the saucepan, whisking continuously.
  • Continue to cook, stirring constantly, until the mixture thickens enough to coat the back of a spoon.
