Ingredients
  

Marinade:

  • 1 cup Banana sauce or ketchup if unavailable
  • 1 cup Soy sauce
  • 1 cup Lemon-lime soda
  • 1/2 cup Brown sugar
  • 1/4 cup fresh Lime juice from about 3 limes
  • 1/4 cup fresh Mandarin orange juice from about 3 oranges
  • 2 cloves Garlic minced
  • 1 tsp coarse Ground black pepper

Meat:

  • 1 1/2 lbs Pork shoulder thinly sliced
  • 6 boneless Skinless chicken breasts

Instructions
 

Prepare the Marinade:

  • In a large bowl, combine the banana sauce, soy sauce, lemon-lime soda, brown sugar, lime juice, orange juice, garlic, and black pepper. Mix well.
  • Set aside 1 cup of the marinade for basting.

Marinate the Meat:

  • Place the pork in one bowl and the chicken in another.
  • Divide the remaining marinade between the two bowls, ensuring the meat is thoroughly coated.
  • Cover and refrigerate for 4-8 hours.

Grill the Skewers:

  • Preheat the grill to medium heat.
  • Thread the marinated meat onto metal skewers.
  • Grill the skewers for 5 minutes on one side, then flip them over.

Baste and Continue Grilling:

  • Brush the meat with the reserved cup of marinade.
  • Continue grilling for about 5 more minutes, until the meat is cooked through.
  • Chicken should reach an internal temperature of 165°F.
  • Pork should reach an internal temperature of 145°F.

Serve:

  • Serve the skewers with white sticky rice for a complete and delicious meal.

Notes

  • If you can't find banana sauce, ketchup makes a great substitute.
  • Make sure to cook the chicken to an internal temperature of 165°F and the pork to 145°F to ensure they are safe to eat.
