Ingredients
  

  • 2 tbsp fresh parsley
  • 2 oz penne
  • 1 cup Parmesan cheese
  • 1 lemon zest
  • 2 tbsp butter
  • 2 tbsp lemon juice
  • 2 cloves garlic
  • ½ tsp pepper
  • 6 oz goat cheese
  • ¼ tsp salt
  • ¼ cup fresh basil
  • 1 cup half and half cream

Instructions
 

  • Cook the pasta al dente following the package directions.
  • Reserve 1 cup of the pasta cooking water.
  • For the sauce, melt the butter in a skillet over medium-high heat.
  • Add the garlic and sauté for 30 seconds to 1 minute, until fragrant.
  • Add the goat cheese and half and half, stirring until smooth.
  • Reduce the heat to medium.
  • Add the cooked pasta and 1/2 cup of the reserved pasta water to the skillet.
  • Stir well to coat the pasta and let it simmer in the sauce for 1-2 minutes.
  • For a thinner sauce, add more of the reserved pasta water as needed.
  • Stir in the basil and season with salt and pepper to taste.
  • Add the lemon juice and zest, and additional pasta water if necessary.
  • Turn off the heat and mix in the Parmesan cheese.
