- 2 tbsp fresh parsley
- 2 oz penne
- 1 cup Parmesan cheese
- 1 lemon zest
- 2 tbsp butter
- 2 tbsp lemon juice
- 2 cloves garlic
- ½ tsp pepper
- 6 oz goat cheese
- ¼ tsp salt
- ¼ cup fresh basil
- 1 cup half and half cream
Cook the pasta al dente following the package directions.
Reserve 1 cup of the pasta cooking water.
For the sauce, melt the butter in a skillet over medium-high heat.
Add the garlic and sauté for 30 seconds to 1 minute, until fragrant.
Add the goat cheese and half and half, stirring until smooth.
Reduce the heat to medium.
Add the cooked pasta and 1/2 cup of the reserved pasta water to the skillet.
Stir well to coat the pasta and let it simmer in the sauce for 1-2 minutes.
For a thinner sauce, add more of the reserved pasta water as needed.
Stir in the basil and season with salt and pepper to taste.
Add the lemon juice and zest, and additional pasta water if necessary.
Turn off the heat and mix in the Parmesan cheese.
