Grilled Broccolini Recipe

Grilling veggies gives them a yummy flavor, and broccolini is no different! Just add olive oil and garlic, and you've got a tasty side dish ready in 15 minutes. It goes great with any main course—chicken, meat, or seafood. Sometimes, I even eat it with eggs for a meatless meal, topped with hollandaise sauce. Have you got leftovers? No problem! Just store them in the fridge for 3-4 days. To reheat, either use the microwave at half power or heat them up in a 350°F oven. Or, enjoy them cold, like antipasti.

Ingredients
  

  • 2 packs Baby broccolini each about 10 ounces
  • ½ tsp Salt
  • ¼ tsp Lemon pepper or regular pepper
  • 1 –2 tbsp Olive oil or olive oil spray
  • 1 Lemon if you want

Instructions
 

  • Heat your grill to medium heat.
  • Put the broccolini on a plate.
  • Pour a bit of olive oil or spray it over the broccolini so it's all covered. You might need to use your hands to make sure it's all coated.
  • Sprinkle salt and lemon pepper on the broccolini.
  • Put the broccolini on the grill and cook for around 5 minutes. Turn them occasionally until they look a bit charred.
  • Take them off the grill. If you want, you can squeeze some lemon juice on top before serving.

Notes

  • Don't let your grill get too hot, or the broccolini will burn before it gets soft.
  • How long you cook depends on how thick the broccolini is. Thicker ones take about 8 minutes, while thinner ones only need 3-4 minutes.
  • You can save any leftovers in the fridge in a sealed container for 3-4 days. Heat them in the microwave at half power or the oven at 350°F.
