Ingredients
  

  • More flour for kneading surface
  • 2 cups All purpose flour
  • 1 cup Cold buttermilk
  • 1 tbsp Baking powder
  • 2 tbsp Honey
  • ¼ tsp Baking soda
  • 5 tbsp Cold unsalted butter
  • Dash of salt

Topping

  • 2 tbsp Honey
  • 3 tbsp Melted salted butter 

Instructions
 

  • Preheat your oven to 425°F and lightly grease a large baking sheet.
  • In the bowl combine the flour, baking powder, baking soda, and salt.
  • Mix on low speed until well combined.
  • Cut the cold butter into small pieces and add them to the flour mixture.
  • Mix till mixture looks like coarse crumbs.
  • Add the honey and mix briefly.
  • Pour the cold buttermilk into the center of the mixture.
  • Mix until just combined; the dough will be sticky.
  • Turn the dough out onto a lightly floured surface and sprinkle a little flour on top.
  • Knead the dough 5-6 times and then pat it into a ½-inch thick circle.
  • Use a cookie cutter to cut out the biscuits.
  • Gather the leftover dough, knead it gently, and shape it into a circle again to cut out more biscuits.
  • Place the biscuits on the prepared baking sheet, leaving about an inch of space between them.
  • In a small bowl, mix the melted butter and honey.
  • Brush this mixture over each biscuit using a pastry brush.
  • Bake the biscuits for 10-13 minutes, or until they are risen and golden brown.
  • As soon as the biscuits come out of the oven, brush them with more of the honey butter mixture.
