Preheat your oven to 425°F and lightly grease a large baking sheet.
In the bowl combine the flour, baking powder, baking soda, and salt.
Mix on low speed until well combined.
Cut the cold butter into small pieces and add them to the flour mixture.
Mix till mixture looks like coarse crumbs.
Add the honey and mix briefly.
Pour the cold buttermilk into the center of the mixture.
Mix until just combined; the dough will be sticky.
Turn the dough out onto a lightly floured surface and sprinkle a little flour on top.
Knead the dough 5-6 times and then pat it into a ½-inch thick circle.
Use a cookie cutter to cut out the biscuits.
Gather the leftover dough, knead it gently, and shape it into a circle again to cut out more biscuits.
Place the biscuits on the prepared baking sheet, leaving about an inch of space between them.
In a small bowl, mix the melted butter and honey.
Brush this mixture over each biscuit using a pastry brush.
Bake the biscuits for 10-13 minutes, or until they are risen and golden brown.
As soon as the biscuits come out of the oven, brush them with more of the honey butter mixture.
