Honey Pepper Pimento Chicken Sandwich Recipe
The new Chick-fil-A honey pepper pimento chicken sandwich is all the craze right now, so I had to see if I could make it at home! My version features grilled chicken thighs and homemade pimento cheese that's absolutely delicious. The jalapeño peppers, pimento cheese, and honey work perfectly together, and the grilled chicken is tender and juicy. This sandwich has everything you could want!

For the Chicken
- 2 Boneless skinless chicken thighs
- 2 tbsp Chicken rub or all-purpose BBQ rub
- 1 tbsp Olive oil
For the Sandwich
- 2 Brioche buns
- 8 –10 pickled Jalapeños
- 1 cup shredded Lettuce
- 2 tbsp Honey
For the Pimento Cheese
- 1 cup shredded Cheddar cheese
- 2 oz Jarred pimentos
- 1/2 cup Mayonnaise
- 4 oz softened Cream cheese
- 1 tsp Garlic powder
- 1 tsp Onion powder
- Salt and black pepper to taste
Prepare the Chicken:
Coat the chicken thighs with olive oil and season with chicken rub or all-purpose BBQ rub.
Grill the chicken thighs over medium-high heat, flipping occasionally, until they reach an internal temperature of 165°F.
Assemble the Sandwich:
Toast the brioche buns if desired.
Build the sandwich by adding a layer of shredded lettuce on the bottom bun.
Add 4-5 pickled jalapeños on top of the lettuce.
Place one grilled chicken thigh on top of the jalapeños.
Add a big spoonful of pimento cheese over the chicken.
Drizzle with honey.
Top with the other half of the brioche bun.
