Ingredients
  

  • 2 filet mignon steaks
  • kosher salt
  • coarse ground black pepper
  • 1 tbsp peppercorns
  • 3 tbsp butter divided
  • 2 tbsp shallots minced
  • 1/2 cup beef broth
  • 1/3 cup brandy or cognac
  • 1/2 cup heavy cream

Instructions
 

  • Apply salt and pepper to the steaks' whole surface. Turn the grill to medium-high heat and leave them on a pan on the counter.
  • Steaks should be cooked for four minutes on the grill.

  • For the peppercorn sauce, begin preparing.
  • Toss the steaks. Once the steaks reach an internal temperature of 127F, grill them for a further 3–4 minutes for medium-rare.
  • Once you have finished making the sauce, take them off the grill and allow them to rest on a pan that is loosely wrapped with foil.

Notes

  • Set the grill to HIGH heat after letting the raw steaks rest.
  • Apply avocado oil, vegetable oil, or any other oil with a high smoke point to your grill grates. Avoid using olive oil.
