- 1/2 cup Milk
- 1 cup Cornmeal
- 1/4 tsp Cajun or Creole seasoning
- 1/4 tsp Fresh ground black pepper
- 1/2 tsp Baking soda
- 1/2 tsp Baking powder
- 1 cup All purpose flour
- 3 tbsp Grated onion
- 1 tbsp Sugar
- 2 tbsp Vegetable oil
- 1 Egg large
- 1/2 tsp Salt
- Oil for frying
Whisk together these dry ingredients- Cornmeal, flour, sugar, baking soda, baking powder, Cajun seasoning, salt, b.lack pepper
In a separate medium bowl, mix milk and vinegar; let it sit for 5 minutes.Whisk vegetable oil, egg, and onion into the milk mixture.
Pour the wet ingredients into the dry ingredients and mix until just combined.Heat 1 1/2 inches of oil in a Dutch oven or heavy skillet to 365 degrees Fahrenheit.
Using two small spoons, drop rounded spoonfuls of the batter into the hot oil.
Fry for 3-5 minutes or until golden brown, turning occasionally. Remove the hush puppies with a slotted spoon and drain on paper towels.
Serve immediately.
