- 2 tbsp alcaparrado
- 1½ lean ground beef
- 1 bay leaf
- ½ large chopped onion
- 1 tsp ground cumin
- 2 cloves minced garlic
- 4 oz tomato sauce
- 1 tomato
- 2 tbsp cilantro
- 1 tsp Kosher salt
- ½ red bell pepper
To prepare the Instant Pot Picadillo, start by selecting the sauté function and heating the pot until hot.
Brown the ground meat and season it with salt and pepper, using a wooden spoon to break it into small pieces until no longer pink.
Next, add diced onion, minced garlic, chopped tomato, salt, pepper, and cilantro.
Sauté for about a minute, then mix in alcaparrado or olives along with approximately 2 tablespoons of the olive brine for added flavor.
Stir in cumin, a bay leaf, tomato sauce, and 3 tablespoons of water.
Close the lid and cook under high pressure for 15 minutes.
Release the pressure naturally or use the quick release method.
