- 2 lbs Boneless skinless chicken breasts (about 3-4 breasts)
- 1/2 tsp Garlic powder
- 8 oz Cream cheese softened
- 1/2 pound fresh Jalapeño peppers about 5-6 peppers
- 4 oz sharp Cheddar cheese grated
- 1/2 cup crispy Bacon crumbled
Preheat your oven to 375˚F (190˚C).
Place the chicken breasts flat in a casserole dish. Season them with garlic powder, then spread the softened cream cheese evenly over the chicken.
Wash the jalapeño peppers, cut off the tops, and remove the seeds and stems according to your spice preference. Slice the peppers into strips and lay them on top of the cream cheese layer. Sprinkle grated cheddar cheese over the jalapeños.
Bake for 40-45 minutes. About 5 minutes before the cooking time is up, sprinkle the crumbled bacon over the casserole, then return it to the oven to finish baking. The chicken is done when it reaches an internal temperature of 165˚F (74˚C).
Serve the Jalapeño Popper Chicken Casserole warm with your choice of sides like potatoes, veggies, or a baked potato. Enjoy!
- You can cut the chicken breasts into halves or chunks, or use chicken tenderloins instead of whole breasts for easier serving. Adjust the cooking time accordingly.
- Leftovers can be stored in an airtight container in the refrigerator for 3-4 days or frozen for up to a month. Reheat before serving for best results.
