Japanese Pork Curry Recipe

- 2-3 Boneless pork chops cubed
- 2 medium Carrots cut into big chunks
- ΒΌ large Onion cubed
- 1 medium Potato cut into big chunks
- 1 tsp Oil
- Half a box of Japanese curry sauce mix/roux about 3.5 to 4 oz
- 3 cups Water
- Cooked rice for serving
Heat oil in a medium pot and brown the pork cubes.
Add carrots, onion, potato, and water. Bring to a boil.
Cover with a lid, reduce heat, and simmer until the potato is tender, about 15 minutes.
Add the Japanese curry sauce mix/roux to the pot. Stir until dissolved and simmer for a couple more minutes.
Season with salt to taste. Serve over cooked rice.
- This recipe uses half of a 7.8 oz box of curry sauce/roux. Store the remaining half in the refrigerator for a few months. If the roux came with a film, store it in a zip-lock bag in the fridge.
- You can reheat the curry in the microwave; just add a splash of water. The sauce thickens in the fridge, so a bit of water helps to thin it out.
