Japanese Pork Curry Recipe

You can whip up a super easy curry dinner with just 5 ingredients and less than 30 minutes! This dish is a tasty and healthy alternative for any night. After mixing in the curry sauce, which thickens into a savory sauce, serve the curry over rice for a complete meal. Any leftovers can be stored in the refrigerator.

Ingredients
  

  • 2-3 Boneless pork chops cubed
  • 2 medium Carrots cut into big chunks
  • ΒΌ large Onion cubed
  • 1 medium Potato cut into big chunks
  • 1 tsp Oil
  • Half a box of Japanese curry sauce mix/roux about 3.5 to 4 oz
  • 3 cups Water
  • Cooked rice for serving

Instructions
 

  • Heat oil in a medium pot and brown the pork cubes.
  • Add carrots, onion, potato, and water. Bring to a boil.
  • Cover with a lid, reduce heat, and simmer until the potato is tender, about 15 minutes.
  • Add the Japanese curry sauce mix/roux to the pot. Stir until dissolved and simmer for a couple more minutes.
  • Season with salt to taste. Serve over cooked rice.

Notes

  • This recipe uses half of a 7.8 oz box of curry sauce/roux. Store the remaining half in the refrigerator for a few months. If the roux came with a film, store it in a zip-lock bag in the fridge.
  • You can reheat the curry in the microwave; just add a splash of water. The sauce thickens in the fridge, so a bit of water helps to thin it out.
