Joy's Banana Bread Recipe

- 1 ½ cups Flour
- 1 cup Sugar
- ½ tsp Baking soda
- 1 tsp Cinnamon
- 1 tsp Ginger
- ½ tsp Salt
- 2 Eggs
- ¾ cup Vegetable oil
- 1 tsp Vanilla
- 1 cup mashed Bananas about 2-3 bananas
- ½ cup chopped Pecans optional
Preheat your oven to 350°F. Grease a loaf pan with vegetable oil spray.
In a medium bowl, mix the flour, baking soda, cinnamon, ginger, sugar, and salt. Set aside.
In a large bowl, mash enough bananas to get 1 cup. Add the vegetable oil, vanilla, and eggs. Whisk until well mixed.
Slowly add the dry ingredients to the banana mixture. Stir until smooth.
If you want, stir in the chopped pecans.
Pour the batter into the greased loaf pan.
Bake for 40-50 minutes, or until a toothpick inserted in the center comes out clean.
Take the bread out of the oven and let it cool completely in the pan.
Once cool, remove the banana bread from the pan, slice it, and enjoy
