- 3 tbsp butter divided
- 2.5 lbs boneless skinless chicken breast sliced
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tbsp chicken broth
- 12 oz steam bag of frozen broccoli
- 3 garlic cloves minced
- 1 oz cream cheese softened
- 1 cup heavy whipping cream
- 1/2 tsp Italian seasoning
- 2/3 cup parmesan cheese grated
- 1/4 cup pepper jack cheese grated
- 3/4 cup mozzarella cheese grated
- 1/4 tsp basil
Preheat the broiler on your oven.
Heat 1 tbsp butter in an oven-safe skillet and sear the seasoned chicken until browned on both sides. Cover and simmer on low until cooked through, then remove the chicken and set aside.
Deglaze the skillet with chicken broth, scraping flavorful bits from the bottom.
Steam broccoli following package instructions or on the stove in boiling water, then drain.
Add 2 tbsp butter and minced garlic to the skillet, sautéing until fragrant.
Stir in cream cheese, heavy cream, and Italian seasoning. Whisk until the sauce thickens.
Add parmesan and pepper jack cheeses, whisking until melted and smooth.
Combine the chicken and broccoli with the sauce, then sprinkle mozzarella cheese and basil on top.
Broil the dish in the oven for 1-2 minutes until the cheese bubbles.
