Ingredients
  

  • 1 Jalapeno pepper, sliced
  • 3 cups Vegetable stock
  • 1 Zucchini, halved and cut into 1/2-inch slices
  • 3 cup Water
  • 4 Green onions, chopped
  • 2 Cloves garlic, coarsely chopped
  • ½ Package firm tofu, drained and cube
  • 2 tbsp Korean soy bean paste

Instructions
 

  • In a saucepan over high heat, bring vegetable stock and water to a boil.
  • Add garlic and soybean paste, stirring until the paste is fully dissolved.
  • Add tofu, green onion, zucchini, and jalapeño to the pot.
  • Bring the soup back to a boil, then lower the heat and let it simmer for 15 minutes.
