Ingredients
  

  • 2 large ripe mangoes
  • 1 medium red bell pepper
  • 1/4 cup finely chopped red onion
  • 1 small jalapeno pepper
  • 1/4 cup chopped fresh cilantro
  • Juice of 1-2 limes
  • Salt and pepper

Instructions
 

  • In a large mixing bowl, combine the diced mangoes, diced red bell pepper, finely chopped red onion, finely chopped jalapeno pepper, and chopped fresh cilantro.
  • Squeeze fresh lime juice over the mango mixture, starting with the juice of one lime. Add more lime juice to taste if desired.
  • Season the salsa with salt and pepper to taste, and gently toss all the ingredients together until well combined.
  • Taste the salsa and adjust the seasoning if necessary, adding more lime juice, salt, or pepper as needed.
  • Once seasoned to your liking, cover the bowl with plastic wrap or a lid and refrigerate the Mango Salsa for at least 30 minutes to allow the flavors to meld together.
  • Before serving, give the salsa a final stir and taste test. Adjust the seasoning if needed, then transfer the salsa to a serving bowl.
