  • 3 cups Mango - cubed, peeled and seeded
  • 1 ½ cup All-purpose flour
  • ¼ cup Unsalted butter, melted
  • ¼ cup White sugar
  • ¼ cup Heavy whipping cream
  • 2 tsp Baking powder
  • 1 pinch Salt
  • 3 Eggs

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Prepare a 12-cup muffin tin by greasing it or lining it with paper liners.
  • In a bowl, mix together the flour, sugar, baking powder, and salt.
  • In a separate large bowl, beat the eggs, cream, and butter until smooth.
  • Gradually stir the dry ingredients into the wet ingredients until the batter is just moistened.
  • Gently fold in the mango pieces.
  • Divide the batter evenly among the muffin cups.
  • Bake for approximately 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
