Ingredients
  

  • Sour cream, for serve
  • Cooking spray or butter
  • Freshly ground black pepper
  • Kosher salt
  • cooked mashed potatoes
  • ¼ diced cooked bacon or ham
  • ¼ minced fresh chives
  • 3 large eggs, beaten
  • 1 cup grated cheese, such as Parmesan or Gruyère, divided

Instructions
 

  • Arrange a rack in the middle of the oven and preheat to 400°F.
  • Lightly grease a mini-muffin tin with cooking spray or butter.
  • In a large bowl, combine mashed potatoes, eggs, 3/4 cup cheese, chives, and bacon or ham.
  • Season with salt and pepper as needed.
  • Spoon the mixture into each muffin cup, topping with the remaining 1/4 cup of cheese.
  • Bake for about 20 minutes, until the tops are browned and the puffs are heated through.
  • Allow to cool for 5 minutes before gently removing from the pan. Enjoy immediately, optionally topped with sour cream.

  • For best results, use well-seasoned mashed potatoes to enhance the flavor of the puffs.
