Mild Pico De Gallo

This fresh and zesty tomato salsa is a simple and vibrant mix of tomatoes, lime, cilantro, and onion. It's perfect for dipping or adding a fresh kick to your favorite dishes.

  • Citrus juicer (optional)
  • Zester (for lime zest)

Ingredients
  

  • 7 roma tomatoes 3 cups or so, seeded and diced small, (see notes*)
  • ¼ cup fresh lime juice approx 2 limes
  • ½ tsp lime zest
  • cup red onion finely diced
  • ½ to ¾ teaspoon salt to taste
  • ¼ tsp cracked black pepper
  • ¼ - ⅓ cup chopped cilantro
  • 1 tsp or so finely diced jalapeño pepper ( totally optional !!)

Instructions
 

  • Finely dice the red onion and add it to a bowl with fresh lime juice.

  • Let the onion and lime juice sit for a few minutes to blend flavors.
  • Seed and dice the roma tomatoes, then add them to the bowl.

  • Add lime zest, cilantro, jalapeño (optional), salt, and pepper.

  • Stir everything together well.
