- 1/2 cup Unsalted butter softened
- 2 tsp Vanilla extract
- 1/3 cup Mashed potatoes
- Creamy peanut butter for filling
- 6 cup Powder sugar
- 1 pinch Salt
Boil, drain, and mash potatoes until tender. Let cool completely.
In a large bowl, mix mashed potatoes, butter, vanilla, salt, and 1 cup powdered sugar with a hand mixer.
Gradually add remaining sugar until dough is firm enough to roll into a ball.
Refrigerate dough for 1 hour.
Divide into two pieces, refrigerate one.
Roll out remaining dough on powdered sugar-dusted surface into 1/4 thick rectangle.
Spread peanut butter, leaving edges clear.
