Ingredients
  

  • 1/2 cup Unsalted butter softened
  • 2 tsp Vanilla extract
  • 1/3 cup Mashed potatoes
  • Creamy peanut butter for filling
  • 6 cup Powder sugar
  • 1 pinch Salt

Instructions
 

  • Boil, drain, and mash potatoes until tender. Let cool completely.
  • In a large bowl, mix mashed potatoes, butter, vanilla, salt, and 1 cup powdered sugar with a hand mixer.
  • Gradually add remaining sugar until dough is firm enough to roll into a ball.
  • Refrigerate dough for 1 hour.
  • Divide into two pieces, refrigerate one.
  • Roll out remaining dough on powdered sugar-dusted surface into 1/4 thick rectangle.
  • Spread peanut butter, leaving edges clear.
  • Roll tightly into log, slice into 1/2 pieces.
