Ingredients
  

  • 1 tbsp Lemon juice
  • 1 Package double-crust pie pastry, thawed
  • 1 tbsp Butter
  • 1/2 cup White sugar
  • 5 cups Peeled and sliced pears
  • 3 tbsp All-purpose flour
  • 1/4 tsp Salt
  • 1 tsp Ground cinnamon
  • 1 tsp Lemon zest

Instructions
 

  • Preheat oven to 450°F (230°C) with a baking sheet on the bottom rack.
  • Line a 9-inch pie plate with one crust; set aside the second crust.
  • In a mixing bowl, combine sugar, flour, cinnamon, lemon zest, and salt.
  • Layer pear slices in the prepared crust, sprinkling each layer with the sugar mixture.
  • Dot with butter and sprinkle with lemon juice.
  • Moisten the rim of the bottom crust with water.
  • Cover the filling with the remaining pie crust, flute the edges to seal, trim excess pastry, and cut slits in the top crust for steam.
  • Bake at 450°F on the baking sheet for 10 minutes.
  • Reduce heat to 350°F; bake until crust is golden brown and filling is bubbly, 35 to 40 minutes.
  • Cool for several hours before serving.
