- 2.5 pounds boneless skinless chicken thighs
- 4 tablespoon olive oil divided
- 1/2 medium lime juiced
- 2 chilies from a can of Chipotle chilies rinsed and chopped
- 1 teaspoon chili sauce from a can of Chipotle chilies
- 4 cloves garlic minced
- 1 tablespoon chili powder
- 2 teaspoons cumin
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon pepper
In a large bowl, mix together the chicken, garlic, olive oil, adobo sauce, and seasoning, cover with plastic wrap. Chill for a minimum of two days or thirty minutes.
Add the marinated chicken to a big pan and cook it over medium-high heat in a skillet with a tablespoon of olive oil.
