- 5 cups Finely sliced large onions
- 1 tbsp Butter
- Water
Melt butter in a large heavy-bottomed pan over high heat.
Add onions and cook, stirring frequently, until the bottom is glazed in pale brown fond, about 5 minutes.
Add 2 tablespoons of water and scrape up the fond.
Continue cooking, adding water and scraping every 2 minutes, until onions are deep brown, about 15 minutes.
Season with salt and remove from the pan quickly to prevent burning.
