Ingredients
  

  • 2 pounds tomatoes
  • 1 small onion
  • 3 cloves garlic
  • 1-2 jalapeño peppers
  • 2 tbsp olive oil
  • Salt and pepper
  • Juice of 1 lime
  • Cilantro leaves

Instructions
 

  • Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil or parchment paper for easy cleanup.
  • Cut the tomatoes in half lengthwise and place them on the prepared baking sheet, cut side up.
  • Add the quartered onion, peeled garlic cloves, and jalapeño halves to the baking sheet.
  • Drizzle the vegetables with olive oil and season with salt and pepper to taste.
  • Roast the vegetables in the preheated oven for 20-25 minutes, or until the tomatoes are soft and slightly charred.
