Ingredients
  

  • 1 tbsp Minced fresh cilantro leaves
  • 1 cup White rice
  • 1 tbsp Butter
  • 2 ½ cups Chicken stock
  • ¼ tsp Ground black pepper
  • 1 tbsp Hot sauce
  • 1 tsp Salt
  • 1 tsp Onion powder
  • 1 tbsp Olive oil
  • 2 cans Red kidney beans
  • 1 Stalk celery, diced
  • 1 Green bell pepper, stem and seeds removed and small diced
  • 1 Large red onion, diced
  • 2 Large cloves garlic, lightly crushed 

Instructions
 

  • In a large saucepan over medium-high heat, warm olive oil.
  • Sauté garlic, onion, celery, and bell pepper until tender.
  • Add kidney beans, onion powder, salt, pepper, and hot sauce.
  • Reduce heat to low and simmer gently while preparing the rice.
  • Meanwhile, bring chicken stock to a boil.
  • Stir in rice and butter, return to a boil, then reduce heat to low.
  • Cover and cook for 20 minutes without lifting the lid.
  • Remove from heat and let stand for 5 minutes.
  • Carefully fold together the cooked rice and bean mixture.
  • Transfer to a serving dish and garnish with cilantro before serving.
