Roll the dough into large balls, about the size of two cookie scoops each.
Make an indentation in each ball, insert a caramel, and reshape it back into a ball.
Place the dough balls on a lined baking sheet.
Bake for 12 minutes, then remove from the oven.
Gently press each cookie with a glass.
Optionally, sprinkle a pinch of sea salt on top.
Return the cookies to the oven and bake for an additional 3 minutes.
