  • Wash the jalapenos.
  • You can smoke them with stems, seeds, and membranes intact, but removing the stems is preferable.
  • Set your smoker to 220 degrees, using apple or pecan wood for enhanced flavor.
  • Place the jalapeƱos on the rack in a single layer with some space between each.
  • Close the lid and smoke for about 4 hours, checking every hour.
  • Smaller chipotle peppers may require a grilling tray.
  • When fully smoked, the peppers will be dry, black, and leathery.
  • Remove from the smoker and place on a platter.
