Ingredients
  

Icing

  • ¼ cup sliced almonds
  • ¾ cup powdered sugar
  • tbs almond extract
  • tbsp milk

Cookies

  • ½ tsp salt
  • 10 tbsp unsalted butter room temperature
  • 1 tsp baking soda
  • 2 cups all-purpose flour weighed in grams or spooned and leveled
  • ¾ cup granulated sugar
  • 2 tsp almond extract
  • 1 large egg room temperature

Instructions
 

  • Set your oven to 350°F (175°C). In a large mixing bowl, beat together the softened butter and sugar with a mixer on medium speed until the mixture is light and fluffy, about 1-2 minutes.
  • Add the egg and almond extract, mixing well.
  • Gradually add the flour, baking soda, and salt to the wet mixture, mixing thoroughly to ensure everything is well combined.
  • Be sure to scrape the sides of the bowl as needed.
  • Scoop 3-4 tablespoons of dough, roll into balls, and place them on a baking sheet, spacing them 2-3 inches apart.
  • Bake for 9-12 minutes, or until the edges begin to lightly brown.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to finish cooling completely.
  • In a small bowl, mix together powdered sugar, milk, and almond extract until smooth.
  • Spread the icing over the cooled cookies and garnish with a few sliced almonds.

Notes

  • For easier handling and to prevent spreading, chill the cookie dough in the refrigerator for at least 30 minutes before baking.
  • To achieve perfectly soft cookies, take them out of the oven when the edges just start to tan, even if the centers seem slightly underbaked.
