Icing
- ¼ cup sliced almonds
- ¾ cup powdered sugar
- ⅛ tbs almond extract
- 1½ tbsp milk
Cookies
- ½ tsp salt
- 10 tbsp unsalted butter room temperature
- 1 tsp baking soda
- 2 cups all-purpose flour weighed in grams or spooned and leveled
- ¾ cup granulated sugar
- 2 tsp almond extract
- 1 large egg room temperature
Set your oven to 350°F (175°C). In a large mixing bowl, beat together the softened butter and sugar with a mixer on medium speed until the mixture is light and fluffy, about 1-2 minutes.
Add the egg and almond extract, mixing well.
Gradually add the flour, baking soda, and salt to the wet mixture, mixing thoroughly to ensure everything is well combined.
Be sure to scrape the sides of the bowl as needed.
Scoop 3-4 tablespoons of dough, roll into balls, and place them on a baking sheet, spacing them 2-3 inches apart.
Bake for 9-12 minutes, or until the edges begin to lightly brown.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to finish cooling completely.
In a small bowl, mix together powdered sugar, milk, and almond extract until smooth.
Spread the icing over the cooled cookies and garnish with a few sliced almonds.
- For easier handling and to prevent spreading, chill the cookie dough in the refrigerator for at least 30 minutes before baking.
- To achieve perfectly soft cookies, take them out of the oven when the edges just start to tan, even if the centers seem slightly underbaked.
