- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup 170g unsalted butter, softened to room temperature
- 3/4 cup 150g granulated sugar
- 1 large egg at room temperature
- 2 teaspoons pure vanilla extract
- 1/4 or 1/2 teaspoon almond extract optional, but makes the flavor outstanding*

- Royal Icing or Easy Glaze Icing royal icing is pictured
- Assorted sprinkles
Whisk together flour, baking powder, and salt in a bowl.
Beat butter and sugar on high speed until smooth, then add egg, vanilla, and almond extract.
Mix in the dry ingredients until combined, adding more flour if the dough is too sticky.
Divide dough into two portions and roll each between parchment paper to 1/4-inch thickness. Chill for 1-2 hours.
Preheat oven to 350°F (177°C) and line baking sheets with parchment.
Cut dough into shapes, rerolling scraps until all dough is used.
Bake for 11-12 minutes or until edges are lightly browned, then cool on a wire rack.
Decorate cooled cookies with royal icing or easy glaze icing, then allow to set.
