Ingredients
  

  • 3 tbsp cornstarch
  • 1 quart fresh strawberries, hulled
  • ¾ cup water
  • 1 pie crust, baked
  • ½ heavy whipping cream
  • 1 cup white sugar

Instructions
 

  • Start by arranging half of the strawberries in the pre-baked pastry shell.
  • Set aside the remaining strawberries in a medium saucepan.
  • Add sugar to the strawberries in the saucepan and cook over medium heat, stirring frequently until the mixture comes to a boil.
  • In a small bowl, whisk together cornstarch and water until smooth.
  • Gradually stir this mixture into the boiling strawberry sauce.
  • Lower the heat and continue to cook, stirring constantly, until the mixture thickens, about 10 minutes.
  • Pour the thickened strawberry mixture over the fresh strawberries in the pastry shell.
  • Place the pie in the refrigerator to chill and set for at least 3 hours.
  • Before serving, whip the cream in a medium bowl until soft peaks form.
  • Serve each slice of pie with a generous dollop of whipped cream.
