- 3 tbsp cornstarch
- 1 quart fresh strawberries, hulled
- ¾ cup water
- 1 pie crust, baked
- ½ heavy whipping cream
- 1 cup white sugar
Start by arranging half of the strawberries in the pre-baked pastry shell.
Set aside the remaining strawberries in a medium saucepan.
Add sugar to the strawberries in the saucepan and cook over medium heat, stirring frequently until the mixture comes to a boil.
In a small bowl, whisk together cornstarch and water until smooth.
Gradually stir this mixture into the boiling strawberry sauce.
Lower the heat and continue to cook, stirring constantly, until the mixture thickens, about 10 minutes.
Pour the thickened strawberry mixture over the fresh strawberries in the pastry shell.
Place the pie in the refrigerator to chill and set for at least 3 hours.
Before serving, whip the cream in a medium bowl until soft peaks form.
Serve each slice of pie with a generous dollop of whipped cream.
- For an extra burst of flavor, try adding a splash of lemon juice to the strawberry mixture while it’s simmering.
- The acidity will enhance the natural sweetness of the strawberries and add a refreshing tang to your pie.
