- 2 Spring Onions
- 2 Bundles Egg Noodles
- 1 Cooking Oil
- 1 Mild Red Chilli Pepper
- 1 tbsp Sesame Oil
- ½ Green Pepper
- ½ Red Pepper
- 1 tbsp Light Soy Sauce
- 100 g Red Onion
- 1 tsp Sesame Oil
- 2 Garlic Cloves
- 3 tbsp Sweet Chilli Sauce
- 1 tbsp Chinkiang Vinegar
- 1 tbsp Light Soy Sauce
Cook the egg noodles according to package instructions, reducing the time by 30-60 seconds. Drain and rinse in cold water; they should be slightly undercooked. Slice the onion into 5mm thick half-moons. Cut the peppers into 5mm ribbons, and thinly slice the chili pepper. Mince the garlic and cut the spring onions into 2-3mm rounds at a 45-degree angle. In a bowl, mix sweet chili sauce, soy sauce, chinkiang vinegar, and sesame oil. Heat a wok on high. Add cooking oil, then stir-fry the red onion for 30 seconds. Add peppers and chili; stir-fry for 90 seconds. Add garlic and cook for another 30 seconds. Add the cooled noodles and stir-fry for 60 seconds. Pour in the sauce and toss to combine. Add spring onions, mix well, and serve immediately.
- To ensure the noodles maintain the perfect texture, be careful not to overcook them during the initial boil, as they will continue to cook when stir-fried in the wok.
