Ingredients

  • 1 tbsp Butter
  • 1 tbsp Olive oil
  • 1/4 cup finely Chopped onion
  • 4 cloves Garlic minced
  • 1 cup Jasmine rice rinsed
  • 1 and 1/2 cups Low-sodium chicken broth
  • 1 dried Bay leaf
  • Salt and pepper to taste
  • 1 and 1/2 tsp Turmeric

Instructions

  • Wash the rice until the water runs clear, then drain it.
  • In a pot on medium heat, melt the butter and add the olive oil.
  • Add the chopped onion and minced garlic. Cook until they're soft.
  • Stir in the rice and turmeric until they're mixed well.
  • Pour in the chicken broth and add the bay leaf. Cover the pot and bring it to a boil.
  • Lower the heat and let it simmer for 15-20 minutes until the liquid is absorbed.
  • Take it off the heat, let it sit for 5 minutes, then remove the bay leaf. Fluff it up with a fork, and it's ready to serve!

Notes

  • Leave rice alone while boiling to keep it from getting mushy.
  • Wash long-grain rice before cooking to remove extra starch.
  • Get the liquid gently boiling, then let the rice cook until the liquid's gone.
  • Cool rice before putting it in the fridge for 3-4 days.
  • Freeze extra rice for later. Thaw in the fridge or microwave when needed
