Ingredients
  

  • 2 tbsp Olive oil
  • 2 tbsp Butter
  • 1 pound Shrimp deveined and tails removed
  • Salt to taste
  • Pepper to taste
  • 3-4 cloves Garlic minced
  • 1 cup halved Cherry or grape tomatoes or sun-dried tomatoes
  • 3-4 cups Baby spinach
  • ¾ cup heavy Cream
  • ¼ cup freshly Grated Parmesan
  • 2 tbsp thinly sliced Basil or parsley

Instructions
 

  • Heat olive oil and butter in a large skillet over medium-high heat. Once the oil is hot and the butter has melted, add the shrimp. Season generously with salt and pepper, and sauté for about 1 minute.
  • Remove the shrimp from the pan and set aside. In the same pan, add the minced garlic, halved tomatoes, and baby spinach. Sauté for about 1 minute until the garlic is fragrant.
  • Stir in the heavy cream, Parmesan cheese, and basil. Reduce the heat to medium and let the sauce simmer until it slightly reduces, about 2-3 minutes.
  • Return the shrimp to the pan and stir to combine everything. Taste and adjust the seasoning with more salt if needed. Serve hot.
