Ingredients
  

  • 1 tbsp oil
  • salsa & guacamole for garnish
  • 1 cup red onion diced
  • 8 burrito sized tortillas gluten-free if needed
  • 1 cup bell pepper diced
  • 3 cups cooked rice
  • 2 corn, frozen or fresh cut from the cob
  • 1 tsp oregano
  • cups black beans
  • 1 tsp cumin
  • 1 tsp smoked paprika

Instructions
 

  • In a medium skillet, heat the oil over medium heat.
  • Sauté the red onion and bell pepper until they are softened.
  • Once softened, add the corn and black beans, stirring to combine.
  • Incorporate the spices into the mixture and stir until everything is well blended.
  • Continue cooking until the mixture is heated through.
  • Warm the tortillas, then place your desired amount of cooked rice and the black bean mixture onto each tortilla.
  • Roll them up into burritos and serve with salsa, guacamole, or your favorite toppings.

  • Feel free to adjust the spices used in the filling to match your taste preferences. You can add chili powder, cumin, smoked paprika, or even fresh herbs like cilantro for added flavor.
  • If you're making larger burritos, use 10-inch tortillas; for smaller, more snack-sized options, 8-inch tortillas work well.
