For the Rim:
- 1 tablespoon lime juice
- 1 tablespoon granulated sugar
For the Drink:
- ½ cup fresh mint leaves
- 1 ½ ounces simple syrup
- 1 tablespoon lime juice
- 1 ounce light rum
- 1 ounce coconut rum
- ¼ cup 56.5 g canned unsweetened coconut milk
- Crushed ice
- Club soda
- Sugared cranberries for garnish
Prepare the rim by dipping the edge of each glass in lime juice, then in sugar to coat.
Set prepared glasses aside.
In a cocktail shaker, add mint leaves and simple syrup, then muddle to release the mint's flavors.
Add lime juice, light rum, coconut rum, coconut milk, and a handful of crushed ice to the shaker, and shake until well chilled.
Fill the rimmed glasses with crushed ice.
Strain and pour the mojito mixture into each prepared glass.
Top with a splash of club soda and garnish with sugared cranberries.
