The Freshman Cook: Magically Delicious Leprechaun Sticks!

These St. Patrick’s Day Leprechaun Sticks are tasty and maybe a bit magical. How about magically delicious? Yeah, that sounds like it might have been used before. Leprechaun Sticks are cookies, in stick form with frosting and sprinkles. Their magical powers have not been formally documented, but they do disappear quickly and they are delicious!

Leprechaun Sticks

(Wilton recipe with changes)

1 cup Butter

1 cup Sugar

1 Egg

1 1/2 teaspoon Vanilla Extract

1/2 teaspoon Almond Extract

2 3/4 cup Flour

pinch of Salt
Frosting

6 ounces Warm Water

5 tablespoons Meringue Powder

1 teaspoon Cream of Tartar

2.25 pounds Confectioners Sugar

Wilton Forest Green Color

Green Sanding Sugar

Wilton Shamrock Mix Sprinkles

Preheat your oven to 350 degrees.

Beat the butter and sugar together until well blended.

Beat in your egg and extracts and mix well.

Combine flour and salt and then add to egg mixture.

Mix together.

This is the Wilton pan I used. It is called a Cookie Sticks Pan.

Spray the pan with vegetable pan spray. Then take a

paper towel and wipe off  the excess oil. Take a piece of dough, make it the length of the opening in the pan, and push down in to the pan. It doesn’t take a lot of dough. Fill each cookie cavity about 2/3 full. Smooth the top of the dough. Bake your cookies for 9-10 minutes.
Let the pan cool for 10 minutes. This time is important. If you don’t allow the cooling time, some of the cookie may stick. Mix up a batch of my favorite frosting! Combine the water and the meringue powder in a mixing bowl,

by whisking together for 30 seconds.

Add the Cream of Tartar, and whisk together for 30 seconds again.

Pour all the confectioners sugar into the bowl.

Mix on low for 10 minutes.

This frosting gets dry quickly, so keep it covered.

Take about a 1/2 cup of the white icing and color it green. Leave the rest white. You will have frosting left over, so you could half the recipe if you wanted to. I used a Wilton #2 tip and squiggled the icing across the cookie stick.
Now squiggle the green icing across the sticks covering some of the white. Sprinkle green sanding sugar across the icing on half of the sticks. Let dry. Sprinkle the shamrock mix over the other half of the sticks. Let dry. That’s it. Share your magic Leprechaun Sticks with friend and family! Thanks for joining me today.
