The Freshman Cook: Cinco de Mayo Chicken Flatbread

I call this recipe Cinco de Mayo Flatbread, but, of course, you do not have to wait until May 5th to enjoy the flavors of this tasty appetizer. It is so easy to make. I used purchased salsa and flatbread, pan fried the chicken, and it was ready in about 20 minutes! As a matter of fact, you might consider serving this flatbread as an entree for lunch or dinner! One thing is for definite. No matter when you eat it, you are going to love it!  Cinco de Mayo Flatbread

Grilled Chicken Breast

Chipotle Seasoning

Flatbread

Refried Beans

 Onion or Green Onion

Cilantro

Queso Fresco

Sprinkle your chicken breasts with 

Chipotle Seasoning. I use Mrs Dash.

It is salt free and adds a great flavor. 
Pan fry until cooked.

Spread refried beans all over the flatbread.

Slice your onions, tear some pieces of cilantro,

and distribute over flatbread. Use
yellow onion, green onion, or both.

Crumble the Queso Fresco to cover the flatbread.

Place flatbread under broiler.

Cook until browned and the cheese is melty.

Serve your flatbread with salsa, sour cream, and avocado.

Enjoy!
