The Freshman Cook: Pork Meatball Mini Sub/#FoodieExtravaganza

Every fall when football season rolls around, I try to make at least one new sandwich or appetizer that we haven’t served in the past. This year our special sandwich is this Pork Meatball Mini Sub! This mini sub is a made up of ground pork with a little ground chuck mixed in, some seasoning and parmesan cheese, and they are served on the cutest little buns ever! They look great and taste even better, making them perfect for friends and family! Today for #FoodieExtravaganza, everyone is cooking with pork. Pork Meatball Mini Sub

 (makes 9-10 sandwiches)

3 tablespoons Extra Virgin Olive Oil
1 clove Garlic-diced
28 oz. Crushed Tomatoes
Salt and Pepper
1/2 pound Ground Pork
1/4 pound Hamburger 
1/4 teaspoon Garlic Powder
1 teaspoon Onion Powder 
1 Egg
1/8 cup Italian Bread Crumbs
1/8 cup Traditional Bread Crumbs
1/2  cup finely shredded Parmesan
1-1 tablespoons Extra Virgin Olive Oil
Shredded fresh Mozzarella
Mini Sub Rolls 
Heat the olive oil and crushed garlic together in a large pot on medium heat.
Once the garlic turns golden, add can of tomatoes, and reduce heat to low. Cook uncovered for 20 minutes. Add salt and pepper, then cook for 3 more minutes.
In a medium bowl, mix together the ground pork, hamburger, garlic powder, onion powder, egg, Italian bread crumbs, traditional bread crumbs, and parmesan cheese. Add oil to a frying pan. Heat pan to medium. Use a scoop and form meatballs. As you form them, place the meatballs in the pan to brown. Spin meatballs around until they are brown. Add to sauce to finish cooking.  

 Shred the mozzarella cheese.
