The Freshman Cook: Pastrami on Rye Final Four Appetizer Stacks

 If you are a Final Four game watcher, like me, you don’t want to spend much time in the kitchen during the game.  This Pastrami on Rye Final Four Appetizer Stack makes sure you catch all of the excitement of the game, and you are serving your family and friends an appetizer they will enjoy! Plus, it’s filling! This app is quick to put together. You can make the sauce ahead of time and refrigerate it, cut the cheese slices and portion the pastrami, and even saute the onions. Put it all together and broil it right before game time! Have fun! Pastrami on Rye Appetizer Stacks

makes 15-16 appetizers
2 tablespoons Mustard
1 tablespoon Sour Cream
1 tablespoon Honey
1 teaspoon Mayonnaise
1 package tiny Rye Breads
1/2 Yellow Onion, sliced very thin
1 pound Pastrami, shaved 
Swiss Cheese Slices

Preheat oven to broil.

In a medium  bowl, mix together the mustard, sour cream, honey and mayonnaise. Cover and refrigerate. Saute the onions.
Cut your cheese slices in to quarters and toast the bread.
Place the bread pieces on a baking sheet. Top each bread slice with a dollop of mustard sauce.
 Top each piece of rye with 1 ounce of Pastrami.
Add sauteed onions.
Add a small dollop of mustard sauce.
Top with 2 squares of cheese. Place under broiler for maybe a minute, keeping a close eye on it. Rotate the tray half way through the time. Remove when cheese has melted.
Drizzle stacks with mustard sauce.
