Tyropita Appetizer Bites / SundaySupper

Today for Sunday Supper, we are celebrating the new movie “My Big Fat Greek Wedding 2”, which opened in theaters this past Friday. I made Tyropita Appetizer Bites and we all made some Greek food to share with you, because it’s not a party without great food!
These Tyropita Appetizer Bites are a great way to get the party started! Fillo dough filled with four cheeses, then baked to a golden finish are really simple and quick to make. I served them with a little bit of strawberry jam for a touch of sweetness.

Tyropita Appetizer Bites

2 ounces Mascarpone
2 ounces Cream Cheese~softened
11 ounces Ricotta
6 ounces Feta w/ Tomato and Basil
3 Eggs
1 package Fillo Dough
2 sticks Butter~melted
Strawberry Jam

Preheat oven to 350 degrees.

Mix together the Mascarpone, cream cheese, Ricotta, Feta and eggs together in a medium sized bowl.
Set aside. This can also be mixed together and refrigerated for quick assembly later.

Unroll 2 pieces of fillo dough. Put one on top of the other and cut into three pieces, approx. 4″- 4 1/4″ wide.

Spread some of melted butter on the top piece of fillo, using a pastry brush. There is no need to saturate the fillo, just brush it on, lightly covering the filo. Place 1 tablespoon of mix and place it on the bottom of the sheets of cut fillo.

Fold the corner of the filo over the top of the mix, forming a triangle.

Fold the triangle up to the top of the fillo strip.

 Fold the triangle of cheese over one more time.

Fold any extra filo over the triangle and dab with butter so it will stick.

Place on a parchment covered baking sheet. Bake for 13-15 minutes.

Serve the Tyropita with a side of strawberry jam for a little taste of sweetness. They also taste great right from the oven, and at room temperature!
