The Freshman Cook: Peaches and Cream Dessert Bars/#FoodieExtravangza

Each month we incorporate one main ingredient into recipes to share with you and this month that ingredient is one of my favorite summertime treats…

PEACHES!

It was hot and humid, and I was looking for something cool and refreshing. Oh, it had to have peaches in it too! What to do? How about a Peaches and Cream Dessert Bar. It has a cookie crust that has to be baked for 20 minutes, and that is the only baking you will do. This recipe is easy and quick and cool and refreshing.  Just what the doctor ordered!

Peaches and Cream Dessert Bars

Crust 

1/3 cup Sugar

1/2 cup Butter

1 Egg White

1 teaspoon Vanilla

1 1/4 cup Flour
Pan Spray

Filling

2 large Peaches

4 ounces + 1 tablespoon Whipping Cream
 4 ounces Cream Cheese softened

2 teaspoon Sugar

Preheat oven to 350 degree. I made these bars in a 6″x9″ pan. It is small. If you want

to use a larger pan, increase your ingredients accordingly.

Cream the sugar and butter together.

Add your egg white and vanilla.

Mix in your flour until thoroughly combined.

Spray your pan. Wipe off any extra spray.

Bake for 15-20 minutes.

Let cool completely.

Whip your heavy whipping cream until it becomes whipped cream. Add sugar as it is mixing. Mix in the cream cheese and blend together. Chop your peaches into small chunks. Layer some of the pieces onto the cookie base. Spread the cream cheese mix onto the peaches. Place the remaining peaches onto the top of your mix. Refrigerate until filling sets, about 4 hours. Cut into small squares and enjoy! Thank you for stopping by and visiting me today!
