The Freshman Cook: Blue Cheese Dip

Happy New Year!

If you are looking for a simple, no fuss, yummy good dip to serve for New Years Eve, or anytime, this Blue Cheese Dip is your answer. The ingredients are so basic that you might just have most, if not all of them in your kitchen right now.  So make it this morning, stick it in the fridge to chill, let the flavors meld together, and you are done!

8 ounces Cream Cheese, softened 1/4 cup Sour Cream 1/4 cup Heavy Cream 4 ounces Blue Cheese 3 Scallions, trimmed and chopped Mix together your cream cheese, sour cream, and heavy cream in a medium bowl. Crumble in your blue cheese and add 2/3 of the scallions. Stir until well mixed, but still slightly chunky. Put your dip in a container and place it in the refrigerator until you are ready to serve.
Garnish the top of the dip with the rest of the scallions. Serve with your favorite crackers. See what I mean, simple and fast. I served mine with mini club crackers. I love the mini crackers! Mini means I can eat twice as many, right? You and your guests are going to love this dip! I have made it many times, and it never disappoints me!
