The Freshman Cook: Chicken Fajita Bites

Unless you are stranded on a desert island, you know that it is Super Bowl week, and that the big game is this Sunday. I’m really not sure who is playing, but I will be sure to find out by kickoff! To me, this day is always about the food.  One of the fun appetizers I will be serving are these Fajita Bites. They are tasty and easy to make, with a lot of the prep work done the day before. Win! Chicken Fajita Bites

1 Chicken Breast

 sprinkles of Chipotle Seasoning
9 Scoops Chips
mini red, orange, and yellow Peppers
1/4 cup Onion
4 Cheese Mexican Blend Shredded
1/4 cup Salsa
1/4 cup Sour Cream
1/2 Avocado

Sprinkle your raw chicken breasts with the

Chipotle Seasoning, and then pan fry.

Chop your onion and peppers into small pieces.

They should be small enough to fit in the scoops.

Saute them in a pan until tender.

Once your chicken is cooked, let it cool, and then

pull it apart in to shreds. Once shredded, cut the 

chicken into small pieces to fit into the scoops.

Chop your avocado half into small chunks.

Begin to load up your scoops. Place the chicken

in the bottom. Top it with the peppers and onion.

Sprinkle the cheese on top of each fajita bite.

Add a dab of salsa to each scoop.

Top each piece with a bit of avocado.

Serve and enjoy!

If you want to make some of this recipe the day before you are

serving it, you could go ahead and cook, cool, and shred

the chicken the night before.  Dice your peppers and onions

also, but I would cook them on the day you are serving. 

This definitely gives you a leg up when it comes to

putting it all together!
