The Freshman Cook: Day 3 of 14 Days of Valentine's-Valentine Butter Cookies

Today we are celebrating with these

Valentine Butter Cookies stacked on a heart shaped sugar cookie!

Lemon Butter Cookies 

(cookie recipe adapted from Wilton)

(makes approx. 4 dozen cookies)

1 1/2 cups Flour

5 tablespoons Butter, softened

1/2 cup Sugar

1 Egg Yolk

1/2 teaspoon Vanilla Extract

1/2 teaspoon Lemon Extract

3 tablespoons Milk

Frosting
 
6 ounces Warm Water 5 tablespoons Meringue 1 teaspoon Cream of Tartar 2.25 pounds Confectioner’s Sugar

Also

1/2  of a red candy stick (per cookie)

preheat oven to 325 degrees

I used the Scalloped Cookie pan from Wilton to make these cookies.  Prepare the pan by spraying with Vegetable Spray. Measure out your flour and then set aside. In a mixing bowl, beat your butter and sugar until light and fluffy. Add your egg yolk and flavorings, beat until combined. Alternate between adding the flour and milk  until well combined. I used a tiny 1 teaspoon scoop that I have and placed 1 scoop on each ring.  Roll each teaspoon into a small rope.
 Pressed a rope into each flower….
 and smooth it into the mold. Bake each sheet of cookies for 7-8 minutes. After they cooled,  remove them by using a toothpick to pry up the side. They come out with no problem. Let the cookies cool completely while you make the frosting.  The recipe above, is my “go to” favorite. Mix together the warm water and the meringue powder. Add the cream of tartar and mix together. Add all of the confectioner’s sugar at one time, and mix together until desired consistency.

Tint some frosting red and some pink. Use a #2 Wilton tip and make a bag with each color of red, pink and white. Starting with the red, drizzling over the cookies.  Add the pink and the white and let them dry.
Outline your heart cookie, and fill it in.  Before it is dry, place the half candy stick in the middle of the cookie  and let it  dry completely. It will stand up by itself with no problem. Stack your butter cookies over the candy stick. Use frosting to glue on the candy heart. Place another candy heart on the large heart, and write the recipients name! You can wrap it in a cellophane bag and tie it. with matching ribbon for a cute gift!
