The Freshman Cook: Valentine Mousse Cups / Day 13 of 14 Days of Valentine's Day!

These Valentine Mousse Cups are special.

The cups are put together using Ghirardelli candy

squares and chocolate frosting. Then they are filled with

Chocolate Mousse. Although these are made with

the Valentine candy squares, any of the squares would

do, making this a special dessert for any celebration!

2 tablespoons Butter

4 ounces Milk Chocolate

3 Eggs, separated

1/4 cup Sugar

1/2 cup Heavy Cream  

1/2 teaspoon Vanilla

Ghirardelli Valentine Squares

Chocolate Candy Melt-melted

Chop up chocolate so it will melt quicker and evenly.

Melt the butter and chocolate together in a double boiler

over low heat. As the chocolate is almost done 

melting, remove it from the stove and use a wooden spoon to 

 beat the chocolate until smooth.

Pour the chocolate in to a bowl, add the egg yolks, 

and mix together .

Refrigerate.

 Beat the egg whites with half the sugar until

they hold stiff peaks. Set aside.

 Beat the cream with the remaining sugar and vanilla

until it holds soft peaks.

Stir  a couple of spoonfuls of the whites into the

chocolate mix to lighten it up a bit, then fold in 

the remaining whites thoroughly but gently.

Fold in the cream and refrigerate until chilled.

 

  Make the chocolate cups by putting the first 2 squares

together as shown. Place a line of candy melt down the 

side of the square that is being placed inside. In

this case the square that says “be mine” is going inside.

Attach the other side the same way.

Now place the square on the other side.

The squares are flexible and easy to move at

this time because the candy melt has not set up yet. Place in the refrigerator until firm. Once firm, you can attach the bottom piece. Flip the square over and attach piece by checking the fit, and then attaching melted candy melt to edges of piece and setting on the bottom. Place in refrigerator until firm, but it will not take as long as when you firmed up the sides. Fill box with chocolate mousse.
Add sprinkles for fun. Chopped or grated chocolate would be cute here also! Enjoy your Valentine Mousse Cups! Happy Valentine’s Day!
