Turkey Taco Casserole

Ingredients
- 1 Chopped red bell pepper
- 1 lb Turkey
- 3 tbsp Chili powde
- 1 Yellow diced onion
- 3 cups Grated colby jack cheese
- 2 cup Chicken broth
- 1 Green chilis can
- 1 cup Salsa
- 1 tsp Sea salt
- 1 Drained black beans can
- 2/3 cup White rice
- 4 Garlic cloves minced
- 1 Tbsp Avocado Oil or Olive Oil
Turkey Taco Casserole Serving
- 3 Chopped green onion stalks
- 1/2 cup Salsa
- 1 Sliced ripe avocado
- 1/2 cup Sour cream
Instructions
- Preheat your oven to 375°F and grease the casserole dish with cooking spray.
- In a large skillet over medium-high heat, warm the avocado oil and add diced onion and, cook until softened, about 3 to 5 minutes.
- Next, add the ground turkey to the skillet, breaking it into bite-sized pieces with a spatula. Cook until most of the pink color is gone. Sprinkle lightly with sea salt.
- Transfer the cooked turkey and onion mixture to the prepared casserole dish.
- Add chopped bell pepper, minced garlic, chili powder, chicken broth, salsa, uncooked white rice, drained black beans, green chiles, and sea salt.
- Stir everything until well combined and sprinkle grated colby jack cheese over the top.
- Cover the casserole dish with aluminum foil and bake for 45 minutes.
- Remove from the oven, take off the foil, and switch the oven to High Broil.
- Broil the casserole for 5 to 8 minutes, or until the cheese is bubbly and golden brown.
- Once done, let it sit for a bit to allow the liquid to absorb into the rice.
- Serve with your choice of toppings such as corn chips, avocado, black olives, sour cream, salsa, or extra shredded cheese.
