  • 3 tbsp Sweet Chilli Sauce
  • 1 tbsp Chinkiang Vinegar
  • 1 tbsp Light Soy Sauce

Slice the onion into 5mm thick half-moons. Cut the peppers into 5mm ribbons, and thinly slice the chili pepper. Mince the garlic and cut the spring onions into 2-3mm rounds at a 45-degree angle. In a bowl, mix sweet chili sauce, soy sauce, chinkiang vinegar, and sesame oil. Heat a wok on high. Add cooking oil, then stir-fry the red onion for 30 seconds. Add peppers and chili; stir-fry for 90 seconds. Add garlic and cook for another 30 seconds. Add the cooled noodles and stir-fry for 60 seconds. Pour in the sauce and toss to combine. Add spring onions, mix well, and serve immediately.
