  • ½ tsp lime zest
  • â…“ cup red onion finely diced
  • ½ to ¾ teaspoon salt to taste
  • ¼ tsp cracked black pepper
  • ¼ – â…“ cup chopped cilantro
  • 1 tsp or so finely diced jalapeño pepper ( totally optional !!)
