Ingredients
  

  • 3/4 lb bacon
  • 1 lb bite-sized pieces of cauliflower
  • 10 oz bite-sized pieces of broccoli
  • 1/2 cup lightly salted sunflower seeds
  • 1/2 small red onion diced
  • 4 oz cheddar cheese cut into small cubes
  • 1 cup mayonnaise
  • 1/4 cup red wine vinegar
  • 2 tablespoons sugar

Instructions
 

  • In a food processor, pulse the cauliflower four or five times, then remove and leave aside. It ought to resemble chunkier cauliflower rice. But you don't want to chop it very fine.
  • Combine the chopped red onion, apple, cauliflower, and broccoli in a large mixing basin. Mix until thoroughly blended.
